These Slow Cooker Pumpkin Spice Granola Baked Apples are a delicious autumn treat that's perfect for dessert or even breakfast. The warm spices and crunchy granola complement the sweet, tender apples for a cozy and satisfying dish.
Ingredients:
- 4 large apples, cored
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup granola
- 1/4 cup chopped pecans or walnuts
Instructions:
Add maple syrup, vanilla extract, pumpkin pie spice, and pumpkin puree to a bowl
Mix them together
Put some of the pumpkin mixture inside each cored apple
Cook the stuffed apples on low for a long time
Chop up some nuts and sprinkle them on top of the apples
For 3 to 4 hours, or until the apples are soft, cover and cook on low heat
