Ingredients:
- 1 1/2 cups gluten-free rolled oats
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 cup creamy peanut butter gluten-free
- 1/4 cup powdered sugar gluten-free
- 1/2 cup coconut cream
- 1 teaspoon vanilla extract
- 1/4 cup dairy-free chocolate chips optional, for garnish
Instructions:
Preheat the oven to 350F 175C
In a food processor, pulse the rolled oats until finely ground
Add melted coconut oil and maple syrup to the ground oats and pulse until combined
Press the oat mixture into the bottom of four 8-ounce jars, creating a crust
Bake the crusts for 10-12 minutes, or until lightly golden
Remove from oven and let cool completely
In a mixing bowl, combine peanut butter, powdered sugar, coconut cream, and vanilla extract
Mix until smooth and creamy
Divide the peanut butter mixture evenly among the cooled crusts in the jars, spreading it out evenly
If desired, top each jar with dairy-free chocolate chips for garnish
Chill the assembled pies in the refrigerator for at least 1 hour before serving
