Ingredients:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup strawberry puree
- 1/2 cup chocolate chips
Instructions:
In a bowl, combine the chocolate cookie crumbs and melted butter
Press this mixture into the bottom of a 9-inch springform pan to create the chocolate crust
In a large mixing bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy
In a separate bowl, whip the heavy cream until stiff peaks form
Gently fold the whipped cream into the cream cheese mixture until well combined
Divide the cheesecake mixture into three equal portions
Leave one portion plain
Mix the strawberry puree into the second portion of cheesecake mixture until well combined
Pour this strawberry cheesecake mixture over the chocolate crust in the pan
Melt the chocolate chips in the microwave or using a double boiler until smooth
Stir the melted chocolate into the remaining portion of cheesecake mixture
Pour the chocolate cheesecake mixture over the strawberry layer in the pan
Chill the Neapolitan cheesecake in the refrigerator for at least 4 hours, or until it's set
