Healthy Peanut Butter Power Cookies



These healthy peanut butter power cookies are packed with wholesome ingredients like oats, flaxseed, and chia seeds. They're a perfect combination of energy and flavor!

Ingredients:

  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1/4 cup chia seeds
  • 1/4 cup chopped dark chocolate or cacao nibs

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine the peanut butter, honey or maple syrup, and vanilla extract

Mix until smooth and well combined

Add the baking soda, salt, rolled oats, ground flaxseed, and chia seeds to the bowl

Stir until everything is evenly incorporated

Fold in the chopped dark chocolate or cacao nibs, chopped nuts, and dried cranberries or raisins

Using a spoon or cookie scoop, portion out the dough onto the prepared baking sheet, leaving some space between each cookie

Gently flatten each cookie with the back of a fork or your fingertips

Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden around the edges

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
